'Global baker' sees trend back to butter
(5 January 2017) NZ Herald - New Zealand butter, says Kiwi-born 'global baker' Dean Brettschneider, is now melting the hearts of Asians as it melts in their mouths.
Things have changed - especially the taste test. A few years back, stories abounded about the Asian palate not reacting well to the taste of butter.
"That's because baking was driven by local interests who were interested only in a low price point - meaning the product was, well, pretty horrible," says Brettschneider - the baker who translated his New Zealand beginnings into a global business incorporating Shanghai, Singapore, Manila, London and Copenhagen, plus a healthy TV career and consultancy to the likes of celebrity TV chef Rick Stein. (8 June 2016) Guests of Holiday Inn Express Singapore Clarke Quay can now say good morning to top quality breads, pastries and coffee by acclaimed local bakery Baker & Cook. A new Baker & Cook Kiosk will be located in the sprawling indoor-outdoor lobby atrium of the hotel, providing guests, neighbours and staff with delicious menu offerings all day for a light meal on-the-go, gourmet coffee meeting or dinner.

to hang out in and deliver our wonderful Baker & Cook experience & store.
After the overwhelming success at our Opera Estate Baker & Cook and Plank
Pizza operations, we found the exact location that has made Baker & Cooksuch

Kiwi Baker in California, Brettschneider is filling
in time before our breakfast meeting at that most iconic
of LA breakfast meeting locations, the Polo Lounge at the
Beverly Hills Hotel.
His walk takes him down the long palm-tree-lined boulevards that surround the
hotel and which after a while, all start to look the same.
Being Los Angeles, there are no other people out walking so Brettschneider hails
a passing car to ask for directions. The driver is (Jay)
Leno - "I work in TV" - and he delivers our Global Baker
