(11 January 2017) - ClickTheCity.com - New food concepts Baker & Cook and Plank Sourdough Pizza open today, January 11, at S Maison in Conrad Manila. Both brands are the brainchild of global baker Dean Brettschneider, a Kiwi celebrity entrepreneur, TV host, and author. Brettschneider is both owner and founder of the two brands which first opened in Singapore, including Brettschneider's Baking & Cooking School. Together with The Bistro Group team, he now opens his first outlets in Manila that showcases his signature artisan bread, cakes, pastries, and hand-crafted sourdough pizzas.

'Global baker' sees trend back to butter
(5 January 2017) NZ Herald - New Zealand butter, says Kiwi-born 'global baker' Dean Brettschneider, is now melting the hearts of Asians as it melts in their mouths. Things have changed - especially the taste test. A few years back, stories abounded about the Asian palate not reacting well to the taste of butter. "That's because baking was driven by local interests who were interested only in a low price point - meaning the product was, well, pretty horrible," says Brettschneider - the baker who translated his New Zealand beginnings into a global business incorporating Shanghai, Singapore, Manila, London and Copenhagen, plus a healthy TV career and consultancy to the likes of celebrity TV chef Rick Stein.

Baker & Cook Kiosk to open in Holiday Inn Express Singapore Clarke Quay:
(8 June 2016) Guests of Holiday Inn Express Singapore Clarke Quay can now say good morning to top quality breads, pastries and coffee by acclaimed local bakery Baker & Cook. A new Baker & Cook Kiosk will be located in the sprawling indoor-outdoor lobby atrium of the hotel, providing guests, neighbours and staff with delicious menu offerings all day for a light meal on-the-go, gourmet coffee meeting or dinner.

Since the opening of the first flagship outlet in 2012, Baker & Cook has rapidly expanded to five bakeries – the flagship outlet at Hillcrest Road, followed by Chip Bee Gardens, Bugis at Intercontinental Hotel, Sunset Way at Clementi Arcade and Swan Lake Avenue at Opera Estate. Holiday Inn Express Singapore Clarke Quay will be the first Baker & Cook Kiosk.

A Kiwi Baker in California previewed in Sunday Star Times:
(9 February 2014) In Los Angeles to film part of his new series, A Kiwi Baker in California, Brettschneider is filling in time before our breakfast meeting at that most iconic of LA breakfast meeting locations, the Polo Lounge at the Beverly Hills Hotel. His walk takes him down the long palm-tree-lined boulevards that surround the hotel and which after a while, all start to look the same. Being Los Angeles, there are no other people out walking so Brettschneider hails a passing car to ask for directions. The driver is (Jay) Leno - "I work in TV" - and he delivers our Global Baker - "so do I" - back to the hotel.

11 January 2017 - Gist - Somewhere inside S Maison in Conrad Manila is a spot that opens as early as 7 a.m., serves the softest, most addictive breads, and is beside pretty much the only thing that reminds those of us who live in Metro Manila that the Philippines is actually an archipelago — the ocean. The new establishment, which prefers to be called a bakery, is Baker & Cook, and to be able to get in for an early breakfast, you will have to go through Plank Sourdough Pizza, which has an entrance along Seaside Boulevard. Consider it a speakeasy of sorts, except instead of liquor, it serves carbs, which are just as illicit.
